As you probably know by now, one of my most cherished pastimes is baking, especially for others. I mean, is there a better way to show you adore someone than by bringing them a freshly-baked treat? Coming from an entrepreneur with very limited time, I can’t think of one.
So, after searching for the perfect dessert to bring to a meeting with my finance team, AKA some of my favorite people, I found just the one. Cue Susan Spungen’s absolutely addictive Peanut Butter Thumbprint Cookies with Sour Cream Ganache. This peanut butter bliss-yielding cookie recipe has quickly become one of my most loved and, as an ultra-fan and long-time subscriber of Susanality, her collection of inspired recipes, that’s saying a lot.
Filled with a rich and gooey ganache thats sour cream provides a hint of tang to balance out the chocolaty sweetness (I use semi-sweet Valrhona chocolate), this Peanut Butter Thumbprint is the perfect mixture of soft and crumbly — chewy on the inside and crispy on the outside. Plus, the unexpected addition of Rice Krispies inside gives a surprising crunch for a twist on a classic peanut butter cookie. Top the ganache with large, coarse flakes of sea salt for the ideal blend of sweet and salty and you'll see just how “decadently addictive” they are.
Though this recipe requires attention to details and patience, I promise it’s worth every minute (again, that’s coming from someone who doesn’t have a moment to waste). Simply bake, fill, cool, and enjoy.
